Rocket Pop Fizz
Blast off into summer — no rocket required.
This fizzy, layered mocktail channels the iconic red, white, and blue Rocket Pop popsicle melting on a blazing summer afternoon. Tart cherry and citrus grenadine form a bold red base, a creamy lemon-lime coconut layer floats in the middle, and a vivid blueberry syrup top ties it all together — all brought to life with the crisp, effervescent lift of 7UP. Every sip is a nostalgic trip straight back to the ice cream truck.
Ingredients
- 1.5 oz grenadine (for the red layer)
- 0.5 oz fresh lemon juice
- 1 oz coconut cream
- 0.5 oz lemon-lime simple syrup (equal parts sugar + water simmered with lemon & lime zest)
- 1.5 oz blueberry syrup (store-bought or simmered fresh blueberries with sugar and water, strained)
- 6 oz chilled 7UP, divided
- 1 cup crushed ice
Instructions
- Fill a tall highball glass to the top with crushed ice.
- RED LAYER: Pour the grenadine and fresh lemon juice directly over the ice. Add 2 oz of chilled 7UP and stir gently just at the bottom of the glass to combine the red layer.
- WHITE LAYER: In a small shaker, briefly stir together the coconut cream and lemon-lime simple syrup. Using the back of a bar spoon held just above the red layer, slowly pour the coconut cream mixture over the spoon to float it on top of the red layer.
- BLUE LAYER: In a small cup, stir the blueberry syrup with the remaining 4 oz of 7UP to pre-fizz it slightly. Using the back of the bar spoon again, gently pour the blueberry 7UP mixture over the white layer to create the blue top.
- Garnish with a skewer of fresh blueberries, a maraschino cherry, and a lemon wheel across the rim — or rest a mini Rocket Pop popsicle right on the edge.
- Serve immediately with a wide straw and remind your guests NOT to stir — let them admire those patriotic layers first!
