The Peach & Pine Reunion
Two iconic American landscapes meet in one unforgettable sip.
This refreshing mocktail bridges the warm, sugary soul of Atlanta, Georgia — famous for its peaches and sweet tea — with the crisp, earthy wilderness of Idaho, celebrated for its pine forests and huckleberries. Together, they create a layered, bittersweet drink that's as heartwarming as a family gathered from opposite ends of the country. It's sweet, bright, a little wild, and perfectly balanced — just like the best reunions.
Ingredients
- 3 oz fresh peach nectar (or blended fresh peach puree)
- 1 oz huckleberry or wild blueberry syrup (simmer equal parts huckleberries, sugar, and water, then strain)
- 1 oz fresh-squeezed lemon juice
- 4 oz strong-brewed sweet tea, chilled (black tea, sweetened while hot)
- 2 oz sparkling water
- 3–4 fresh rosemary leaves (muddled)
- Generous handful of ice
- Pinch of cinnamon (for garnish dusting)
Instructions
- Make the huckleberry syrup ahead of time: combine ½ cup huckleberries (or wild blueberries), ½ cup sugar, and ½ cup water in a small saucepan. Simmer for 10 minutes, mash the berries, then strain and cool.
- In the bottom of your mason jar, add the fresh rosemary leaves and gently muddle them 3–4 times — just enough to bruise and release their piney aroma. Do not over-muddle.
- Fill the mason jar generously with ice.
- Pour in the peach nectar, huckleberry syrup, and fresh lemon juice directly over the ice.
- Add the chilled sweet tea and stir gently with a long spoon to combine the layers.
- Top with the sparkling water and give one final, gentle stir to integrate.
- Dust a tiny pinch of cinnamon over the top of the drink for warmth.
- Garnish with a fresh peach slice on the rim, a sprig of rosemary, and a skewer of huckleberries laid across the top of the jar. Serve immediately.
