Midnight Mirage
Drink the sky. Feel the sand. Disappear into the dark.
Midnight Mirage is a deep, indigo-hued cocktail that evokes lying flat on warm desert sand as the Milky Way unfolds overhead. Smoky mezcal channels the dry desert air and dying campfire embers, while butterfly pea flower tea creates a dramatic, star-filled midnight-blue color that shifts to violet when the citrus hits — just like the horizon at dusk. A float of silver-luster honey foam crowns the drink like the glowing band of stars above.
Ingredients
- 1.5 oz mezcal (joven/unaged)
- 0.5 oz elderflower liqueur (e.g., St-Germain)
- 0.75 oz fresh lemon juice
- 0.5 oz agave nectar
- 1.5 oz chilled butterfly pea flower tea
- 2 dashes cardamom bitters
- Honey Foam: 1 oz aquafaba + 0.5 oz honey + pinch of silver luster dust (shaken vigorously)
Instructions
- Brew a strong butterfly pea flower tea (steep 6–8 dried flowers in 2 oz hot water for 5 minutes), then chill completely.
- Make the honey foam: combine aquafaba and honey in a small jar or milk frother, add a pinch of edible silver luster dust, and whip or shake vigorously until foamy and aerated. Set aside.
- In a cocktail shaker, combine mezcal, elderflower liqueur, fresh lemon juice, agave nectar, and cardamom bitters with ice.
- Shake hard for 15–20 seconds until well chilled.
- Double-strain into a chilled coupe glass.
- Slowly pour the chilled butterfly pea flower tea down the side of the glass — it will sink and create a deep blue-to-purple gradient layer.
- Gently spoon the silver honey foam over the top to create a luminous, cloud-like surface.
- Garnish with a dehydrated lemon wheel dusted in edible silver luster powder, balanced across the rim.
