A warm, softly sweet mocktail built for the ache of 3am longing — when home feels both far away and impossibly vivid. Honeyed chamomile and toasted vanilla wrap around a tart cherry base like a familiar hug, while a hint of cardamom adds that bittersweet, can't-quite-sleep restlessness. It's the taste of your childhood kitchen at midnight, of someone who loves you leaving the porch light on.
Ingredients
- 4 oz strong-brewed chamomile tea, cooled to warm
- 2 oz tart cherry juice
- 1 oz fresh-pressed apple juice
- ¾ oz honey syrup (1:1 honey and warm water, stirred to combine)
- ¼ tsp pure vanilla extract
- 1 pinch ground cardamom
- 1 pinch fine sea salt
- Warm water to top (1–2 oz)
- Ice (optional — serve warm or over a single large ice cube)
Instructions
- Brew one chamomile tea bag in 5 oz of hot water for 5 minutes, then remove the bag and allow the tea to cool to a warm (not hot) temperature.
- In a small saucepan or microwave-safe cup, stir together equal parts honey and warm water until fully dissolved to make your honey syrup. Set aside.
- In your mug or glass, combine the warm chamomile tea, tart cherry juice, fresh apple juice, honey syrup, vanilla extract, cardamom, and sea salt.
- Stir gently and slowly — like you're not in a hurry to go anywhere — until everything is integrated.
- Taste and adjust: add a touch more honey syrup if you need more comfort, or a splash more cherry juice if you need more ache.
- Top with 1–2 oz of warm water to soften and open up the flavors.
- If serving over ice, place one large ice cube in a wide glass and pour the mixture over it for a cool, late-night version.
- Garnish with a dusting of cinnamon, a fanned apple slice on the rim, and a dried chamomile flower floated gently on the surface.
