Porch Light On

A warm, softly sweet mocktail built for the ache of 3am longing — when home feels both far away and impossibly vivid. Honeyed chamomile and toasted vanilla wrap around a tart cherry base like a familiar hug, while a hint of cardamom adds that bittersweet, can't-quite-sleep restlessness. It's the taste of your childhood kitchen at midnight, of someone who loves you leaving the porch light on.

Ingredients

  • 4 oz strong-brewed chamomile tea, cooled to warm
  • 2 oz tart cherry juice
  • 1 oz fresh-pressed apple juice
  • ¾ oz honey syrup (1:1 honey and warm water, stirred to combine)
  • ¼ tsp pure vanilla extract
  • 1 pinch ground cardamom
  • 1 pinch fine sea salt
  • Warm water to top (1–2 oz)
  • Ice (optional — serve warm or over a single large ice cube)

Instructions

  1. Brew one chamomile tea bag in 5 oz of hot water for 5 minutes, then remove the bag and allow the tea to cool to a warm (not hot) temperature.
  2. In a small saucepan or microwave-safe cup, stir together equal parts honey and warm water until fully dissolved to make your honey syrup. Set aside.
  3. In your mug or glass, combine the warm chamomile tea, tart cherry juice, fresh apple juice, honey syrup, vanilla extract, cardamom, and sea salt.
  4. Stir gently and slowly — like you're not in a hurry to go anywhere — until everything is integrated.
  5. Taste and adjust: add a touch more honey syrup if you need more comfort, or a splash more cherry juice if you need more ache.
  6. Top with 1–2 oz of warm water to soften and open up the flavors.
  7. If serving over ice, place one large ice cube in a wide glass and pour the mixture over it for a cool, late-night version.
  8. Garnish with a dusting of cinnamon, a fanned apple slice on the rim, and a dried chamomile flower floated gently on the surface.
