First Thaw
Winter's last breath meets spring's first kiss.
The First Thaw is a bright, floral, and gently warming cocktail that captures that magical in-between moment when the cold finally surrenders. Elderflower and fresh lemon bring the hopeful brightness of new blooms, while a whisper of ginger liqueur echoes the last lingering chill in the air. Topped with a honey-chamomile foam, it's like sunshine breaking through clouds on the first day you can finally open the windows.
Ingredients
- 1.5 oz gin (preferably a floral or cucumber-forward style, e.g., Hendrick's)
- 0.5 oz elderflower liqueur (St-Germain)
- 0.5 oz ginger liqueur (Domaine de Canton)
- 0.75 oz fresh lemon juice
- 0.5 oz honey syrup (2:1 honey to water)
- 1 oz chilled chamomile tea
- 1 egg white (or 0.75 oz aquafaba for vegan option)
- 2 dashes orange blossom water
- Splash of chilled prosecco or dry sparkling wine, to top
Instructions
- Brew a small batch of chamomile tea and chill it completely before use.
- Combine the gin, elderflower liqueur, ginger liqueur, fresh lemon juice, honey syrup, chamomile tea, egg white, and orange blossom water in a cocktail shaker without ice (dry shake).
- Seal and shake vigorously for 20–25 seconds to build a rich, silky foam from the egg white.
- Add a generous scoop of ice to the shaker and shake again hard for another 15 seconds until well chilled.
- Double-strain through a fine mesh strainer into a chilled stemless wine glass or large coupe.
- Gently top with a splash of prosecco, pouring slowly over the back of a spoon to preserve the foam layer.
- Garnish with a thin cucumber wheel floated on the foam, a single edible violet pressed gently on top, and a light pinch of dried chamomile flowers dusted over the surface.
- Serve immediately and enjoy in a patch of sunlight.
