First Thaw

Winter's last breath meets spring's first kiss.

The First Thaw is a bright, floral, and gently warming cocktail that captures that magical in-between moment when the cold finally surrenders. Elderflower and fresh lemon bring the hopeful brightness of new blooms, while a whisper of ginger liqueur echoes the last lingering chill in the air. Topped with a honey-chamomile foam, it's like sunshine breaking through clouds on the first day you can finally open the windows.

Ingredients

  • 1.5 oz gin (preferably a floral or cucumber-forward style, e.g., Hendrick's)
  • 0.5 oz elderflower liqueur (St-Germain)
  • 0.5 oz ginger liqueur (Domaine de Canton)
  • 0.75 oz fresh lemon juice
  • 0.5 oz honey syrup (2:1 honey to water)
  • 1 oz chilled chamomile tea
  • 1 egg white (or 0.75 oz aquafaba for vegan option)
  • 2 dashes orange blossom water
  • Splash of chilled prosecco or dry sparkling wine, to top

Instructions

  1. Brew a small batch of chamomile tea and chill it completely before use.
  2. Combine the gin, elderflower liqueur, ginger liqueur, fresh lemon juice, honey syrup, chamomile tea, egg white, and orange blossom water in a cocktail shaker without ice (dry shake).
  3. Seal and shake vigorously for 20–25 seconds to build a rich, silky foam from the egg white.
  4. Add a generous scoop of ice to the shaker and shake again hard for another 15 seconds until well chilled.
  5. Double-strain through a fine mesh strainer into a chilled stemless wine glass or large coupe.
  6. Gently top with a splash of prosecco, pouring slowly over the back of a spoon to preserve the foam layer.
  7. Garnish with a thin cucumber wheel floated on the foam, a single edible violet pressed gently on top, and a light pinch of dried chamomile flowers dusted over the surface.
  8. Serve immediately and enjoy in a patch of sunlight.
