This vibrant, layered mocktail channels every dripping, sticky-fingered memory of a Rocket Pop popsicle on a scorching summer afternoon, paired with the crisp, clean tingle of an ice-cold lemon-lime soda. Three brilliantly colored layers — cherry red, bright white coconut, and electric blue raspberry — stack inside a frosty glass, and a splash of lemon-lime soda gives it that unmistakable nostalgic fizz. It's summer in a glass: bold, sweet, tart, and impossibly refreshing.

Ingredients

  • 3 oz cherry juice (100% tart cherry juice, chilled)
  • 1 oz grenadine (non-alcoholic)
  • 3 oz coconut water, chilled
  • 1 oz cream of coconut
  • 3 oz blue raspberry lemonade (or blue raspberry syrup mixed with 2 oz lemonade)
  • 4 oz lemon-lime soda (such as 7UP, ice cold — ideally from a glass bottle)
  • 1 oz fresh lemon juice
  • 1 tsp white sugar (to sweeten lemon layer if needed)
  • Crushed ice, packed

Instructions

  1. Chill your tall glass in the freezer for at least 5 minutes before building the drink — this is key to keeping the layers crisp and the drink ice cold.
  2. LAYER 1 — RED (Cherry Base): Mix the cherry juice and grenadine together in a small cup. Fill your chilled glass with a generous packed layer of crushed ice. Slowly pour the cherry-grenadine mixture over the ice until it fills roughly the bottom third of the glass. Set aside.
  3. LAYER 2 — WHITE (Coconut Middle): In a separate cup, stir together the coconut water and cream of coconut until combined. Using the back of a spoon held just above the red layer, very slowly pour the coconut mixture over the spoon so it gently floats on top of the cherry layer, filling the middle third of the glass.
  4. LAYER 3 — BLUE (Blue Raspberry Top): In a small cup, stir together the blue raspberry lemonade (or blue raspberry syrup + lemonade) with the fresh lemon juice, and sugar if needed. Again using the back of a spoon, gently pour the blue raspberry mixture over the coconut layer to create the top third.
  5. THE 7UP FINISH: Very slowly drizzle the ice-cold lemon-lime soda straight down the inside edge of the glass (or over the back of a spoon) so it integrates lightly with the top blue layer without collapsing the lower layers. The bubbles will rise through all three colors like a rocket launching!
  6. Garnish with a mini Rocket Pop popsicle or a red-white-and-blue fruit skewer on the rim and a striped paper straw.
  7. Serve IMMEDIATELY and instruct your guest to admire the layers before stirring — then mix it all together and enjoy the full flavor explosion!
