The Mockmosa is a sophisticated, zero-proof twist on the classic mimosa that refuses to be boring about it. Bright fresh-squeezed orange juice meets zingy ginger beer, a splash of white grape juice for that winey depth, and a kiss of turmeric-honey syrup for warmth and that unmistakable golden hue. It's dressed to impress at brunch and doesn't need a drop of champagne to earn its flute.

Ingredients

  • 3 oz fresh-squeezed orange juice (strained)
  • 2 oz chilled white grape juice
  • 2 oz chilled ginger beer
  • 0.5 oz turmeric-honey syrup (1:1 honey + water + a pinch of turmeric, stirred cold)
  • 0.25 oz fresh lemon juice
  • Ice (for mixing only — served without)

Instructions

  1. Make the turmeric-honey syrup: combine equal parts honey and warm water with a small pinch of ground turmeric. Stir until dissolved, then let it cool completely.
  2. In a mixing glass or small pitcher, combine the fresh orange juice, white grape juice, lemon juice, and turmeric-honey syrup. Stir gently with ice to chill — do NOT shake, to preserve carbonation later.
  3. Strain the chilled juice mixture into a champagne flute, filling it about halfway.
  4. Slowly top with the chilled ginger beer, pouring over the back of a spoon to preserve the bubbles and create a slight layered effect.
  5. Give one single, gentle stir with a bar spoon to just marry the layers.
  6. Garnish with a half orange wheel on the rim and a small sprig of fresh mint tucked alongside it. Serve immediately.
