This electrifying mocktail mirrors the full arc of a wakeboarding day — the cool, glassy lake water, the citrus burst of adrenaline as you pop up on the board, and the sun-soaked, refreshing exhale when you finally glide across the surface. Layered in shades of deep blue and sparkling aqua with a foamy white cap, it looks just like a wake splitting open behind a speeding boat. Crisp, bright, and wildly refreshing.
Ingredients
- 2 oz butterfly pea flower tea (chilled, strongly brewed)
- 1 oz fresh lime juice
- 1 oz watermelon juice (fresh pressed)
- ¾ oz honey-ginger syrup (1:1 honey to water, simmered with 4 slices of fresh ginger)
- 4 oz sparkling water (chilled)
- 1 oz coconut water (chilled)
- 2 drops pure vanilla extract
- Pinch of sea salt
- Ice (crushed or cubed)
Instructions
- Make the honey-ginger syrup ahead of time: combine equal parts honey and water in a small saucepan, add 4 fresh ginger slices, simmer for 5 minutes, then cool completely and strain.
- Brew a strong cup of butterfly pea flower tea and chill it in the fridge until cold. It should be a deep, vivid indigo blue.
- In a cocktail shaker, combine the watermelon juice, fresh lime juice, honey-ginger syrup, coconut water, vanilla extract, and a pinch of sea salt. Add ice and shake vigorously for 15 seconds until well-chilled.
- Fill your highball glass to the brim with crushed or cubed ice.
- Strain the shaken mixture over the ice — it will settle as a bright, citrusy base layer.
- Slowly pour the chilled butterfly pea flower tea down the back of a bar spoon over the ice. It will sink through and create a dramatic deep-blue bottom layer, with the citrusy mix hovering above in aqua and gold tones.
- Gently top with sparkling water, pouring slowly to create a foamy white 'wake' on top.
- Garnish with a thin watermelon slice fanned on the rim, a sprig of fresh mint, and a few extra drops of butterfly pea tea drizzled over the foam for a lake-water shimmer effect. Serve immediately with a wide straw.
