Sideways Burn
All the thrill of the drift — none of the spin-out.
A bold, smoky-sweet mocktail that captures the raw, controlled chaos of a race car drifting through a hairpin turn. The charred pineapple and smoked paprika syrup evoke the screaming rubber and tire smoke, while the ginger beer provides a turbocharged kick and the tamarind paste delivers a sharp, tangy edge — like the split-second tension of holding a perfect drift angle at full throttle.
Ingredients
- 2 oz fresh-pressed pineapple juice (from charred pineapple slices)
- 1 oz tamarind concentrate
- ¾ oz smoked paprika simple syrup (equal parts sugar & water, simmered with 1 tsp smoked paprika, strained)
- ½ oz fresh lime juice
- 4 oz ginger beer (spicy variety preferred)
- 1 dash black pepper bitters (non-alcoholic)
- 1 egg white OR aquafaba (for foam)
- Crushed ice
Instructions
- CHAR THE PINEAPPLE: Slice fresh pineapple into rings and char them directly on a cast-iron pan or kitchen torch until caramelized and slightly blackened. Set one half-wheel aside for garnish.
- JUICE: Press or muddle the charred pineapple slices to extract 2 oz of smoky juice. Strain out solids.
- MAKE THE SYRUP: Combine equal parts sugar and water in a small saucepan with 1 tsp smoked paprika. Simmer 3 minutes, cool, and strain.
- DRY SHAKE: In a cocktail shaker without ice, combine the charred pineapple juice, tamarind concentrate, smoked paprika syrup, lime juice, and egg white (or aquafaba). Shake vigorously for 20–25 seconds to build a rich foam.
- WET SHAKE: Add a large handful of ice to the shaker and shake again hard for another 15 seconds.
- BUILD: Fill your rocks glass with crushed ice. Double-strain the mixture over the ice.
- TOP: Slowly pour the spicy ginger beer over the back of a spoon to create a layered, turbulent effect — like a car breaking traction.
- FINISH: Add one dash of black pepper bitters on top of the foam. Dust lightly with smoked paprika. Perch the charred pineapple half-wheel on the rim.
- Serve immediately and drink fast — just like a drift, it doesn't last long.
