Ember & Silk is a smoky, spicy, and surprisingly smooth mocktail built for a cozy night in with a kick. Fiery ginger beer and muddled fresh jalapeño bring the heat, while tamarind syrup and a splash of pomegranate juice add a deep, sultry sweetness that lingers like a warm evening at home. A smoked salt rim ties it all together — intimate, bold, and utterly indulgent.

Ingredients

  • 2 slices fresh jalapeño (seeds in for extra heat)
  • 1 oz fresh lime juice
  • 1 oz tamarind syrup (store-bought or homemade)
  • 2 oz pomegranate juice
  • 4 oz spicy ginger beer (e.g., Fever-Tree Fiery Ginger Beer)
  • 1 dash smoked paprika (for stirring in)
  • Smoked sea salt + chili powder mix (for rim)
  • Large ice cube or sphere

Instructions

  1. Prepare the rim: Mix equal parts smoked sea salt and chili powder on a small plate. Run a lime wedge around half the rim of your rocks glass, then dip that half into the salt-chili mixture. Set aside.
  2. Add 2 jalapeño slices to a cocktail shaker and muddle firmly for about 15 seconds to release the oils and heat.
  3. Add the fresh lime juice, tamarind syrup, pomegranate juice, and a small dash of smoked paprika to the shaker.
  4. Fill the shaker with ice and shake vigorously for 15–20 seconds until well chilled.
  5. Place one large ice cube or sphere into the prepared rocks glass.
  6. Double-strain the mixture through a fine mesh strainer over the ice cube to remove jalapeño pulp and seeds.
  7. Top gently with the spicy ginger beer — do not stir, to preserve the fizz.
  8. Garnish with a fresh jalapeño wheel laid on top of the ice and a small sprig of fresh thyme tucked alongside.
